Cranberry Recipes with Delicious Variations
Healthy Cranberry Recipes

Tart, delicious and nutritious, cranberries can be used in a variety of recipes and around the holidays in November and December, it's easy to find fresh cranberries.

It's no accident of nature

are in season during the
winter months when
colds and flu abound.
Stay healthy this winter
with these cranberry recipes.

Cranberry sauce, is of
course a standard holiday
recipe and once you have
the basic cranberry sauce
made, you can jazz up
your recipe with lots of
ifferent spices, like cinnamon
or nutmeg, or add ingredients
such as ginger or raisins.



Basic Cranberry Sauce Recipe

1 c. sugar - use organic, raw sugar if you prefer
1 c. water
4 c (one 12-oz package) fresh or frozen cranberries

1   Wash cranberries, then pick them over and remove any with flaws.
2.  In a medium saucepan bring water to a boil and slowly add sugar, dissolving.
3.  Add the cranberries. Reduce the heat and simmer for about 10-15 minutes or until the cranberries burst.
4.  Add any of these optional ingredients and blend well.

  • Pecans
  • walnuts
  • sliced orange or orange peel-if you use this option, use orange juice in place of the water in this cranberry sauce recipe.
  • substitute 1-half cup raspberry vinegar for water
  • substitute 1 c pomegranate juice for water
  • 1 tsp fresh minced ginger
  • 1 cup raisins
  • 1 cup currants
  • 1 cup blueberries
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice.

For this cranberry sauce recipe, about one cup of raisins or oranges can be added, with about one-half cup nuts. Add spices to taste.

Remove cranberry sauce from the heat. Cool it to room temperature and then it can be chilled in the refrigerator. As it cools, your cranberry sauce will thicken..

The Cranberry sauce base recipe yields about  2 1/4 cups.





Cranberry Waldorf Salad Recipe

Since fresh cranberries are so plentiful in the fall, try this colorful cranberry waldorf salad recipe at your next holiday gathering.

Ingredients

  • 1 1/2 c chopped fresh cranberries
  • 1 c chopped red apple
  • 1 c chopped celery
  • 1 c seedless green grapes cut in half
  • 1/3 c raisins
  • 1/4 c chopped walnuts
  • 2 tbs white sugar
  • 1/4 tsp cinnamon
  • 8 oz vanilla yogurt

1.  Combine all ingredients together and mix to make sure sugar and cinnamon coats everything.
2.  Cover the salad and let it chill in the refrigerator for about 2 hours.
3.  Before serving, mix ingredients once more.

Cranberry Jello Salad

Ingredients

  • 2 c fresh cranberries
  • 2 oranges
  • 1 carrot
  • 1 c pecans or walnuts
  • 3/4 c white sugar
  • 1 (8 oz) can pineapple, crushed and drained
  • 2 (3 oz) packages raspberry flavored gelatin mix
  • 1 c boiling water
  • 1 c cold water

1.  Peel carrot and oranges, dice into small pieces. Chop cranberries and nuts. Set aside.
2.  Pour boiling water into gelatin mix and stir until it's dissolved. Add cold water, pineapple and sugar and mix until sugar is dissolved.
3.  Combine with other ingredients and pour into a mold or glass pan and chill overnight.
