Cherry Cranberry Salad Recipe

Combine these ingredients:

2/3 cup water
1/2 cup couscous, uncooked
1/3 cup dried cherries, coarsely chopped
1/3 cup dried cranberries, coarsely chopped
1/3 cup coarsely chopped carrots
1/3 cup chopped cucumber
2 green onions, sliced
2 tablespoons balsamic vinegar or raspberry vinegar
1 tablespoon extra-virgin olive oil
1 tablespoon Dijon-style mustard
Salt and pepper to taste

If you prefer another flavored vinegar, any will work in this recipe.

Directions for Diet Cherry Cranberry Salad

Prepare couscous according to package directions or bring water to a boil, stir in couscous, cover and remove from heat. Allow to stand for 5 minutes.

Uncover and fluff couscous with a fork and allow to cool for 10 minutes. While couscous is cooling, combine cherries, cranberries, cucumber, carrots and green onions in a small bowl and mix. Stir into couscous.

Diet Cherry Cranberry Salad Dressing

Combine flavored vinegar, olive oil, and mustard; then mix well. Mix into couscous mixture and stir with a fork until all ingredients are coated.

Add salt and pepper to taste.





This delicious weightloss salad recipe can be served at room temperature or chilled.

Recipe makes 4 servings. Each serving contains about 166 calories and 3.7 grams of fat.
