Ghee, or clarified butter, is made when the milk solids are separated from the liquid, leaving a rich, liquid amber oil-like substance that has been used for about 2,000 years in Ayurveda or the ancient natural healing system of India.

Ingredients

1 to 2 pounds of cultured, unsalted butter

Cultured, unsalted butter is also called sweet butter. Cultured means the milk that made the butter was aged for a day in a cool place before churning, resulting in an easy to digest, superior butter.

For extra nutrition and no added chemicals or harmful ingredients, try using organic butter, which is less likely to burn than regular.

Directions for Ghee Recipe

Melt butter over medium heat, stirring continually. A foam will form on top, which you can leave. It will subside on its own.

Continue melting until the white curds separate from the liquid and sink to the bottom of the pan. They will start to brown but that's all right.

You'll know when your ghee recipe is done when a drop of water flicked into the pan boils immediately and makes a crackling noise.

Using cheesecloth, strain the curds from the liquid. This liquid that is left will be a rich, amber color. This amber oil is your ghee.

Cool the liquid and then store in a jar with a tight-fitting lid. If ghee is stored this way, avoiding condensation, it can sit on your kitchen countertop, ready for use in any recipe.





Variations to our Ghee Recipe:

  • While melting the butter, try adding 4 whole cloves. This adds a very delicate flavoring to your ghee. Strain cloves out with milk curds.
  • Add onions, garlic, turmeric or ginger while melting to create seasoned ghee. Adding these spices helps boost the immune system and decrease the inflammation that causes arthritis.
  • Add cinnamon, cardamom and nutmeg to your ghee recipe for a sweeter seasoning. Ghee with these seasonings can be used in baking desserts or in fruity recipes.

When using ghee in recipes, some directions say to remove the foam and others say to leave it so you can try it whichever way you want to.
