Healthy Sweet Potato Gingerbread Recipe for the Holidays

When holidays come, everybody has a favorite easy gingerbread recipe and this is one I've been using for several years. The sweet potatoes and molasses offer something unique and nutritious for this holiday recipe or it's a good way to use left over sweet potatoes when you have them.

This gingerbread recipe would make a lovely gift from the kitchen.

Ingredients

1 c sifted flour
1 tsp ground ginger
3/4 tsp ground cloves
2 tsp baking powder
1/2 tsp salt
1/3 c margarine or butter
1 c mashed sweet potatoes
1/2 c sugar
1/4 tsp soda
2 eggs
1/2 c light molasses

Directions for Sweet Potato Gingerbread Recipe

Preheat oven to 350 degrees.

In a mixing bowl, blend sweet potatoes and margarine or butter.

Add sugar and soda, stir until blended.

Add eggs and beat well.

Mix dry ingredients in separate bowl. Slowly add to sweet potato mixture, alternating flour mixture and molasses.

Spread batter onto 8x8x2 inch baking dish.

Bake for one hour or until toothpick comes out clean.

Cool gingerbread for 10 minutes and turn out on a wire rack to finish cooling.





Serve this easy gingerbread recipe with whipped topping for an extra treat.
