Ingredients for Holiday Spiced Nuts
1 cup/250 mL whole almonds
1 cup/250 mL blanched peanuts
1 cup/250 mL sugar
1/4 cup/60 mL butter or margarine
1-1/2 tsp/7.5 mL Pumpkin Pie Spice
1/2 tsp/2.5 mL Cinnamon (6 oz)
1/2 tsp/2.5 mL Allspice
1/2 tsp/2.5 mL Ginger
1/2 tsp/2.5 mL salt, if desired

Cooking Directions
Combine all ingredients in heavy skillet.
Cook over medium heat, stirring
constantly, until sugar is melted
and golden brown, coating nuts
(about 15 minutes). Spread nuts
in thin layer on foil; cool. Break
into clusters containing 2 or 3 nuts each.
Makes 3 cups.
Sherried Cinnamon Nuts
These special Sherried Cinnamon Nuts make a terrific addition to a cookie plate or gift box at holiday time. Take them as a hostess gift to your next holiday party.
Ingredients
1 1/2 c sugar
1/3 c sherry
1/4 tsp salt
1 tsp grated orange rind
1/2 tsp cinnamon
2 to 3 c walnuts halves lightly toasted.
Directions for Sherried Cinnamon Nuts
In saucepan, combine sugar, sherry and salt. Bring to a boil and cook stirring often, until mixture reaches 240 degrees on the candy thermometer.
Remove room heat, stir in orange rind, cinnamon and nuts.
Stir until syrup is cloudy and walnuts are thoroughly coated.
Turn out onto waxed paper and quickly separate nuts into single pieces.
Makes 1 1/2 lb candied nuts.
Keeps a few days at room temperature, 3 weeks in refrigerator or 6 months frozen.
Spicy Pecan Nut Recipe
This recipe, with the zing of chili powder and a pinch of cayenne, makes these nuts the hot and spicy variety.
Ingredients for Spicy Pecans
½ c sugar
1 ½ tsp salt
1 ½ tsp chili powder
½ tsp cinnamon
pinch cayenne pepper
1 egg white
2 cups pecan halves
Directions for recipe
Allow oven to preheat to 300 degrees.
Spray a baking sheet with non-stick cooking spray.
In a small bowl, combine sugar and spices until well blended.
In a larger bowl, whip egg white slightly with a fork.
Add pecans to egg white and coat thoroughly.
Sprinkle spices over the pecans and egg white mixture and coat pecans evenly with spices.
Spread pecans evenly on the prepared baking sheet.Bake for 30 to 35 minutes and allow to cool for 5 minutes.
Break pecans apart into clumps and let cool the rest of the way.
Store in a zip loc plastic bag or plastic covered container.
