Healthy Breakfast Recipe Scrambled Eggs with Salmon

Basil adds a hint of the Mediterranean to this elegant salmon dish. Basil has long been thought to contain potent healing powers, and packs a powerful punch in antioxidants and anti-inflammatory properties.

Ingredients

4 large eggs
4 large egg whites
Freshly ground pepper to taste
3/4 tsp basil
1tsp canola oil
2 scallions, green tops only, thinly sliced
1 ounce cooked salmon (use smoked if desired) flaked
1 ounce reduced fat feta cheese
3 orange or lemon slices

Directions

Whisk eggs, egg whites, basil and pepper to blend.

Sautee scallions for about 30 seconds in canola oil over medium heat. Stir frequently. Add egg mixture and continue stirring. Continue cooking for about 10 seconds, then when eggs are beginning to set, blend in salmon.

Stir continually until eggs are fully cooked, or about 3-5 minutes.

Remove eggs from heat, divide into four portions. Top with reduced fat feta cheese and garnish with orange or lemon slices.
