Healthy Breakfast Recipes Tomato, Egg & Spinach Casserole

Healthy Breakfast Ingredients
1 tbs olive oil
1 clove garlic, finely chopped
1 14.5-ounce can diced tomatoes, drained
Salt and pepper to taste
1 tsp oregano
One bunch spinach, trimmed and washed
8 eggs, separated (yolks kept whole, if possible)
4 oz shredded, low-fat Mozzarella cheese
Directions
Preheat oven to 375° F
Prepare spinach by washing, trimming and drying.
In a large skillet, heat the olive oil, adding garlic. Sauté for about one minute, then add salt, pepper and canned tomatoes. Simmer this mixture for about 3 minutes. Add spinach to this tomato mixture and cook only until spinach starts to wilt.
Put entire mixture into a medium glass baking dish.
Now, whisk the egg whites until frothy, pouring them over the spinach mixture. Add whole egg yolks to the top of casserole and bake until the egg white are set, or about 20 minutes.
