Easy Superfood Recipes - Healthy Blueberry Muffins

Want to add more superfoods to your diet? Try this healthy blueberry muffin. The recipe is easy to make and makes a great breakfast or snack, or as an addition to the dinner menu. In my family, we eat blueberries daily so I'm always looking for tasty blueberry recipes.

For a blueberry muffin snack, try this recipe in a mini-muffin pan for bite size enjoyment and fewer calories.

This healthy, superfood blueberry muffin recipe is lower in fat and calories  than ordinary muffins.



Ingredients

3/4 c low fat milk
1/2 c natural applesauce for low cal sweetening
1/4 c egg substitute or 1 egg
1c all purpose flour
1c whole wheat flour
1/2 c raw or organic sugar
3 tsp baking powder
1 tsp salt
1 c fresh or frozen blueberries

Directions

Preheat your oven to 400F degrees.

Get your muffin pan ready by spraying with cooking spray or using paper muffin liners.

Using a medium mixing bowl, combine the milk, applesauce, egg substitute, blending until mixture is smooth. Set this aside.

Using another bowl, blend wheat and whole flour, sugar, baking powder, and salt.

Making a crater in the center of your flour mixture, pour the liquid ingredients into that center. Stir all ingredients just until flour is moistened.

Batter may be lumpy but that's ok.

Fold in blueberries and pour the batter into muffin pan.

Bake about 18 to 20 minutes for regular muffins, about 10 minutes for mini-muffins.

Remove muffins from pan and serve warm or save for later.
