Easy Weight Loss Recipe - Metabolism Boosting
Energy Bar
Keep this energy bar recipe on hand for times when
you're trying to lose weight but want to keep your
energy up and have a tasty snack. No one will
suspect they’re low fat.
Each tasty energy bar square contains metabolism boosting cinnamon, a fragrant warming spice that also keeps blood sugar in balance. These low fat energy bars are high in iron, zinc and other nutrients, plus they are a great source of fiber to keep you feeling full and satisfied between meals.
These bars travel well so I like to take one with me to nibble when I’m on the run. They can also be frozen individually for a grab and go snack.
Ingredients
1/3c honey
1/4 c orange juice
2 tbs lemon juice
½ cdry-roasted, unsalted sunflower seeds
2/3 c raisins
2 1/2c whole wheat flour
1/2 tsp baking soda
1/4 tsp baking powder
1 tsp cinnamon
1/4c pure maple syrup or sugar free maple syrup
2 egg whites
1 tbs canola oil or cooking oil
1 tsp lemon juice
Directions
Preheat oven to 350 degrees.
Lightly coat a 9x13 inch baking pan with cooking spray.
In a medium mixing bowl, combing honey, orange juice and 2 tbs lemon juice. Stir in dates, sunflower seeds and raisins. Set aside.
In a separate mixing bowl, combine flour, baking soda, baking powder and cinnamon and mix well. Set this aside too.
Combine maple syrup, egg whites, oil and 1 tsp lemon juice in smaller bowl and blend well. Add liquid to flour mixture, blending until well combined with hand mixer. Dough should be crumbly.
Add raisin and nut mixture to dough and blend together by hand.
Spread batter evenly in oiled pan and bake for 12 to 15 minutes, or until toothpick comes out clean in the center.
Place on wire rack to cool and then cut into 12 servings.
