Chicken Caesar Salad with Garlic
This tasty weightloss salad recipe is perfect for lunch
or as a dinner salad.
Caesar Salad Ingredients
2 heads romain lettuce
4 grilled boneless, skinless chick breast halves
Fat Free Dressing Ingredients
1 can reduced fat, Cream of Chicken soup
1/2 cup fat-free low sodium chicken broth
1/4 cup balsalmic vinegar
1/4 cup fat free, shredded Parmesan cheese
3 cloves of garlic
1 tbs low sodium Worchestershire sauce
1/4 tsp black pepper
Directions for Chicken Caesar Salad
Tear lettuce into 2 inch pieces
Cut chicken breasts into 2 inch strips
Set aside
For Dressing, combine soup, broth, vinegar, 2 tbs Parmesan cheese, garlic, Worcestershire sauce and pepper in blender or food processor. Blend until smooth.
Combine lettuse and one cup of dressing in a bowl and toss lettuce to coat with dressing.
Top lettuce and dressing with chicken and croutons and sprinkle on the rest of the Parmesan cheese.
