Eastern Chicken Salad with Olive Vinaigrette

salad is healthy and simple to make.
Couscous offers a nice alternative to traditional rice and high carb potatoes and is central ingredient
in North African cooking. Zesty cumin, a strong spice used in many Middle Eastern dishes, warms not only this spicy dish, but your metabolism as well.
Add rich kalamata olives, with their healthy monounsaturated fatty acids which have been found to help reduce the risk of atherosclerosis and increase HDL (good) cholesterol. Tangy lemon and the bite of capers rounds out this culinary treat.
Ingredients
1c uncooked couscous
1/4 c chopped pitted kalamata olives
2 tbs chopped fresh flat-leaf parsley
1 tbs chopped capers
2 tbs extra virgin olive oil
1 tbs fresh lemon juice
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/2 tsp cumin
1 garlic clove, minced
2 cooked, boneless, skinless chicken breasts
Directions for Easy Chicken Salad
Prepare couscous according to package directions, but leave out salt and oil called for.
Cut up chicken into bite sized pieces. Set aside.
In a large mixing bowl, whisk together Greek olives, parsley, capers, olive oil, lemon juice, salt, pepper and minced garlic. Blend in couscous and gently toss to coat.
Just before serving, add chicken to couscous-olive mixture and mix lightly.
