Our Grilled Chicken Berry Salad is a colorful dinner
entrée, offering a delicious combo of high protein
chicken, mixed with several kinds of succulent superfrood berries and healthy mixed greens and snap peas.



Toasty, crunchy pecans add zing, not to mention healthy omega3 fatty acids. This makes a terrific summertime meal-or for anytime you want to feel like summer!

Ingredients

2 tbs low fat honey mustard salad dressing
1/4 c cider vinegar
1/2 c canola oil
2 tbs orange juice
1 lb skinless, boneless chicken breast halves
8 cups mixed salad greens
1 c sliced fresh strawberries
1/2 c fresh blueberries
1/2 c fresh raspberries
8 oz sugar snap peas
1/2 c toasted pecans

Directions

Using a whisk, mix salad dressing, vinegar, oil and orange juice together. Set these aside.

Preheat the grill or broiler.

Cook chicken for 6 to 8 minutes on each side or until juice runs clear and meat is done. Remove from the heat and allow it to cool.

Cut cook chicken into strips.

Toss together chicken, nuts, peas and fruit in a large salad bowl, then add dressing and toss again until coated.
