Try this Snack Recipe for Pita Wedges with Green Olive Tapenade

possible with this recipe for pita wedges and belly fat
busting green olive tapenade. Olives are a favorite in the
Mediterranean and it isn’t difficult to see why. Olives
contain monounsaturated fat, which promote heart health and helps you lose weight - expecially troublesome belly fat. Olives also contain phytonutrients, omega-3 fatty acids, antioxidants, calcium, iron and vitamins A, C, and E.
All that nutrition in one tasty olive! Tapenade, with its delicious blend of garlic and oregano seasoning, perched on a wedge of whole wheat pita bread, is a real gourmet Mediterranean treat.
Ingredients
3 whole-wheat (whole-meal) pita breads, 6 inches in diameter, each cut into 8 wedges
1 tsp extra-virgin olive oil
1 shallot, finely chopped
2 Roma tomatoes, peeled and seeded, then finely chopped
1 clove garlic, minced
1 tsp finely chopped fresh oregano or 1/2 tsp dried oregano
1/2 tsp red pepper flakes (optional)
1/2 c dry white wine
3/4 cup pitted green olives, rinsed, drained and roughly chopped
Grated zest of 1 lemon
2 tbs) chopped fresh flat-leaf (Italian) parsley
Directions
Preheat oven to 400 F degrees.
On a baking sheet, arrange pita wedges and bake for approximately 8 minutes or until they are crisp and golden colored. Set aside.
Heat olive oil to medium high in a heavy skillet. Add shallots and sauté for about 3 minutes. Continue cooking, blending in tomatoes, garlic, oregano and pepper flakes. When tomatoes are softened, after about 2 minutes, slowly add wine and allow to boil.
Reducing heat, simmer for about 6 minutes, or until liquid evaporated. Stir frequently.
The mixture should be slightly thick.
Remove from heat. Add olives and lemon zest when tomato mixture has cooled, stirring to blend.
This tapenade can be easily made ahead of time and will keep in the refrigerator for up to 2 days. Allow it to reach room temperature before serving.
To serve, place 4 pita wedges on each plate, putting 2 tsp of tapenade on each one. Sprinkle parsley on top.
